Round challahs, served on dinner tables throughout the Jewish Holidays, are seen as a reflection of the continuing cycle of seasons symbolizing hope for a sweet year.
For By The Way Bakery in Hastings, known for its gluten-free treats, challah production is much easier thanks to a new state-of-the-art 7,000-plus square foot kitchen in Pleasantville. "We currently anticipate baking hundreds of challahs for the holiday but, whatever the number, we’ll do our best to have challah for every customer who wants one," said Owner Helene Godin. "Last year, we were baking out of our tiny kitchen in Hastings and as a result, we were reluctant to take orders for challah and sold out within an hour."
She said, particularly at her New York City locations with its large Orthodox population, Rosh Hashanah is almost -- but not quite -- as busy as Thanksgiving.
