The restaurant at 2 Dingle Road in North Salem previously closed for a four week renovation, "to bring a modern and affordable New York City dining experience to North Salem," representatives said in a press release.

Chef Beck Bolender, general manager Jeffrey Skiba and designer Pamela Dailey spearheaded the redesign.

"The team worked together to create a menu and atmosphere primed to put One Twenty One, and North Salem, on the map as New York’s next culinary destination," representatives said in the release.

Bolender brings more than five years of experience from Jean-Georges in New York City, where he earned the title of the youngest sous chef in Jean-Georges history, according to the release.

"Sourcing from local farms and Hudson Valley purveyors, Beck created a unique menu that will encourage guests to share several dishes among their party," representatives said. "Divided into meat, fish and vegetable categories, guests can choose from a selection of global small plates including: hangar steak chimichurri; crispy veal sweetbreads with wilted greens and chili aioli; seafood cioppino; snapper with spring vegetables and spring garlic; pan fried shishitos with parmesan and lemon and goat cheese fritters with bacon jam."

The plates will fall within a price range between $5 and $19. A feature of the seasonal menu will be the introduction of featured meats of the week, where different parts of the animal will be highlighted in specials, according to the release.

“My plan is to make sure the customer leaves the restaurant having tried two to three new dishes,” said Bolender. “I want to open our guests’ eyes to a new world of food and flavor trying dishes that they have never had before, especially in North Salem.”
